Avocado Toast and All it Entails

This post is about avocado toast (and a little something more, but mostly avocado toast). Now, you're probably thinking one of two things: 1. Yes, this is fantastic! I can always learn more about the beauty of avocado toast or 2. Ugh, another Millennial talking about avocado toast. What's next, artisan coffee served by hipsters in flannels? 

If you're in the #1 crowd, I say hooray! If you're in the #2 crowd, I say I like what I like and I persevere (got that from a Tweet from Tyler Joseph, lead singer of twenty one pilots, a band I could talk about for hours, but I won't here I guess).

That leads me to the little something more that this post is about. Let me climb up on my soapbox, first. Uh hem. Try not to let other people's opinions dictate what you like and dislike.

Don't be afraid to hop on the bandwagon of a new trend if that's a wagon you want to ride. Or, if that trend isn't your style, that's okay too. Bottom line: like whatever you like, not what someone or the media tells you to like. Don't let other people make you feel bad for your interest and don't make others feel bad for their interests. Be kind, and like what you like.

Okay, I'm off the soapbox. 

Now, on to the avocado toast. That is something I like a lot, even if people think it's overrated (which it honestly kind of is). But it's delicious and it's pretty and I like it.

One of the best things about avocado toast is you can make it a whole bunch of different ways. Here's a couple of examples just to get your mouth watering:

This one has some sneaky cheese and whole lot of leafy greens. 

This toasty is simple with a dash of red pepper flakes and served with coffee (always good).

This one's got eggs and pine nuts  and that is fine by me.

Well now let me tell you about the best avocado toast I've ever had. It was in Auckland, New Zealand when my friend, Claire, and I were walking around the city to kill time before our flight home that evening. We popped into a very small coffee shop on a side street that had huge windows open to the street. Inside was cozy and full of books, plants, and little trinkets. The few tables were mostly full of people with books and laptops spread in front of them and some Indie music played from a speaker in the corner. It was perfect. 

We both ordered avocado toast and some form of iced coffee, and a lemon loaf slice to split. And this avocado toast was bomb. It was toasted white bread with smashed avocados spread on top. It was topped with sliced cherry tomatoes, bean sprouts, cotija cheese (I think), and a pinch of cayenne. It was served with a lemon wedge which was really just the icing on the cake. This photo doesn't do it justice, but Claire and I still talk about this toast a lot. We've even tried to recreate it, but haven't really managed it yet. 

Fortunately, while attempting to recreate this toast, I managed to make a very good avocado toast of my own. So here's how to make that when you want to eat pretty, tasty things. It's very simple (another beautiful thing about avocado toast). 

I used ciabatta bread and it's super good if you slice and butter it and then toast it in the oven. Then, slice some avocados and lay them across (or if they don't slice well, just spread them, it tastes the same). Next, crumble goat cheese over the top. I absolutely love goat cheese and if you've never had it before, I HIGHLY recommend. Lastly, sprinkle on some salt and pepper and you're done!

So go on and eat your cute snack and embrace whatever you like. I won't judge.
